HEALTHY TUNA FISH SALAD
PORTIONS: 2
INGREDIENTS
5 oz can of tuna
1 tsp olive oil (optional, add 60 calories more to recipe if used)
1/4 cup onions, diced small
1 tbsp scallions, sliced
1 tsp cilantro, washed and chopped
1 tbsp red pepper, finely chopped
1 tbsp red wine vinegar or lemon juice
1/8 tsp low sodium salt or to taste
3 oz spinach, cut in pieces
3 oz romaine lettuces, cut in pieces
2 small tomatoes cut in 8 wedged shape each
½ tbsp balsamic vinegar
PREPARATION
Strain the water off the can of tuna and put it in a bowl.
Add the onions, scallions, cilantro, red pepper, vinegar or lemon juice, salt and mix.
In a bowl mix the spinach, romaine lettuces and balsamic vinegar.
Spread the mix salad on center of the plates.
Place tuna salad at the center.
Arrange the wedged tomatoes around the salad.
