CHICKEN CROQUETTES



PORTIONS
INGREDIENTS:
11 oz. cooked chicken, diced or shredded.
2 tbsp.  vegetable oil
6 tbsp. butter.
1 onion, diced
2 garlic cloves minced.
1 tsp. chopped fresh oregano.
¼ cup diced red peppers.
7 tbsp. all-purpose flour.
2 cups milk.
tsp. ground nutmeg.
½ tsp. ground black pepper.
3 tsp. salt or to taste.
Oil for frying.
DIRECTIONS
In a large frying pan, heat up the vegetable oil and a bit of butter, at a moderate flame.
Sauté the onions and garlic together. Add oregano and red pepper and cook for 2 minutes.
Add the rest of the butter and let it melt.
Add the flour, ground nutmeg, black pepper, salt and whisk it in. Cook for about 5 minutes mixing well. Do not let it burn.
Add the milk and whisk it until the paste becomes very smooth.
Mix in the chicken and cook it for a few minutes until is very hot. Spread the mix in a large platter and let it cool off.  Cover with a film and place it in refrigerator for 3 hours minimum.
Take a portion of the batter with an ice cream scoop, or tablespoon, and with your hands make oval or round shape croquettes.
BREADING THE CROQUETTES
All-purpose flour
Beaten eggs
Bread crumbs
Dredge the croquettes in flour, eggs and bread crumbs.
Fry the croquettes until golden brown.
