MACKEREL CROQUETTES (cakes)


PORTIONS: 10

INGREDIENTS
15 oz.  1 can mackerel (in water)
¾ cup diced onions
1/3 cup small diced celery
1 tbsp. chopped parsley
1 tbsp. chopped cilantro
½ tbsp. chopped capers
¼ cup thinly sliced scallions
¼ cup diced red peppers
¼ cup small diced yellow peppers
2 beaten eggs
1½ tbsp. mayonnaise
¾ cup bread crumbs
½ cup bread crumbs for breading
Oil for frying

METHOD
Measure and chop all ingredients necessary for the recipe.
In a bowl, mix all the ingredients, except for the ½ cup of bread crumbs and the oil.
Divide the mix in 10 equal portions. Pressing with the palm of your hands, make 10 patties or cakes.
Dust it with the rest of the bread crumbs.
Fry them until golden brown.
