INGREDIENTS
2 Pork chops, 8 oz each
1 zucchini, cut in half length wise and half width
1 yellow squash, cut in ½ length wise and half width
2 medium size onions, cut in 4wedges each
1/4 tsp. paprika
1 tbsp. balsamic vinegar
Salt and pepper to taste
PREPARATION
In a cooking tray, place the zucchini, yellow squash, and sprinkle with the paprika, salt and pepper.
In same tray add onions and drizzle with the balsamic vinegar.
Bake in oven at 400° F - 200° C for about 15 minutes.
In the meantime, in a saute pan cook the pork chops with no oil, at medium heat. Brown both sides.
