PORTIONS: 4
INGREDIENTS FOR THE TUNA SALAD
2 can of tuna. 5 oz. each
½ cup diced onions
½ cup diced celery
1 tbsp. small diced red pepper
3 tbsp. mayonnaise
1 tbsp. olive oil
2 tsp. red wine vinegar
½ tsp. ground pepper
½ tsp. salt
½ tbsp. chopped cilantro
METHOD
In a bowl mix tuna, onions, celery, red pepper and cilantro.
In another bowl make a dressing mixing the mayonnaise, olive oil, red
wine vinegar and ground pepper. Add the dressing to the tuna salad and mix.
OTHER INGREDIENTS
2 avocados split in half and remove pits
Spinach leaves cut in pieces
Romaine lettuces cut in pieces
4 small tomatoes cut in wedges
4 hardboiled eggs cut in wedges
1 small shredded carrot
Kalamata olives
Mix the lettuces, shredded carrot and place it in plates.
Stuff the avocados with the tuna salad and put it over the salad.
Decorate the plates with the tomatoes, eggs wedges and Kalamata olives.
DRESSING
½ cup olive oil
¼ cup fresh squeezed lemon juice
Salt and pepper to your taste.
Emulsify the ingredients together.
