YIELDS: 30 TURKEY CROQUETTES
INGREDIENTS
400 g. diced cooked turkey
2 tbsp. vegetable oil
1 cup diced onions
2 minced garlic cloves
1/3 cup small diced orange pepper (any color is good)
1 tbsp. chopped cilantro
2 tbsp. chopped green onions
1 tbsp. chopped fresh oregano
¼ tsp. ground nutmeg
6 tbsp. butter
9 tbsp. flour
2½
cups milk
BREADING
Flour
3 eggs beaten with one tablespoon of milk
Bread crumbs
Oil for frying
METHOD
Heat a pan with the oil and fry the onions and garlic together. Add the
peppers, cilantro, green onions, oregano and nutmeg. Mix well and cook for 2
minutes. Add butter, let it melt, once is hot stir in the flour and let it cook
for 4 minutes at moderate heat. Pour in the milk slowly stirring at the same
time. It should be like a very thick béchamel. Let it cook for about 3 more
minutes. Do not let it burn. Keep stirring. Add the turkey, mix well and cook
until turkey is hot. Let it cool. After is cold, place it in the refrigerator
for a couple hours. After is cold, shape the mix into little ball or cones.
BREADING
Dip the croquettes in flour, egg wash and breadcrumbs. Fry them until
it is a nice golden color.
