GRILLED CHICKEN BREAST WITH APRICOT BALSAMIC SAUCE





PORTIONS: 2     1 PORTION: 308 CALORIES


INGREDIENTS
2 chicken cutlets 5 oz. each
4 pitted apricots and cut in half


MARINADE
1 tbsp. olive oil
1 minced garlic clove
¾ tsp. coarse sea salt
¼ tsp. ground black pepper
2 tsp. chopped oregano


Sauce
¼ cup balsamic vinegar
1 cup diced apricots (pits removed)


METHOD
Make marinate mixing the 5 ingredients for the recipe and coat the chicken with it.
Heat a small pot with the balsamic vinegar and cook the apricots until sauce begins to thicken.
Heat up a griddle.
Grill the apricots on both sides.
Mark and cook chicken on both sides.
Serve the grilled chicken topped with the sauce and arrange the grilled apricots in the plate.
