GRILLED CHICKEN BREAST WITH BASIL LEMON SAUCE
STIR FRY BROWN BASMATI RICE WITH SUNDRIED TOMATOES

INGREDIENTS

pieces chicken breast 6 oz. each
2 tsp.
olive oil
Salt
and pepper to taste
METHOD
Pat dry
the chicken breast with paper towel and season it with salt, pepper and olive
oil.
Heat a
griddle, cook and mark the chicken breast.
Serve with
the basil lemon sauce and stir fried rice.
BASIL
AND LEMON SAUCE
6 large
basil leaves
1 garlic
clove chopped
¼ cup chopped
onions
1 tbsp.
olive oil
1 lemon
extract
1 tsp.
lemon zest
¼ tsp.
salt
¼ tsp.
ground black pepper
METHOD
Place
all the ingredients in a blender and liquefied.
STIR
FRY BROWN BASMATI RICE
½ cup
brown basmati rice
1¼ cup
water
¼ tsp.
salt
1 tbsp.
vegetable oil
¼ cup
diced yellow onions
1/3 cup
diced green peppers
1/3 cup
diced sundried tomatoes
METHOD
In a
small pot, place the rice, water, salt and bring it to a boil. Reduce the heat and
cook until water is absorbed.
Heat
the oil in a frying pan and stir fry the vegetables together.
Add and
mix the rice with the vegetables.
Serve
rice with de grilled chicken breast.
