CAZUELA DE ALAS DE PAVO





PORTIONS: 4

INGREDIENTS

4 Turkey wings, skinless, cut in half
2 tsp olive oil
3 garlic cloves, chopped
1 medium size onion
1 cup leeks, thinly sliced
1 cup carrots, sliced
1 red pepper, diced
3/4 cup celery, sliced
7 cups turkey or chicken broth, unsalted
2 corn, cut in 4 pieces each
4 whole, small size potatoes, peeled or with skin well washed.
1 tsp oregano
1 bay leave
3 cups spinach, cut in pieces
Salt to taste
1/8 tsp pepper, ground

PREPARATION

Heat up at medium temperature a pot with the oil, and brown a bit the onions and garlic and turkey wings together.
Add carrots, red pepper, celery and cook for 3 minutes.
Pour in the turkey or chicken broth
Add corn , potatoes, oregano, bay leave, salt, pepper.
Bring the soup to a boil.
Add the spinach and let it simmer for 20 minutes.
Turn off the flame and let it rest for 5 minutes before serving.
