EASY CAZUELA DE POLLO
PORTIONS: 4 (6 oz each ) or 2 (12 oz each)
INGREDIENTS
1 3/4 qt. cold water
1 ½ lb. chicken thighs deboned and skinless. (4 thighs washed)
1 cup chopped onions
1 tsp ginger, peeled and minced
2 garlic cloves peeled and minced
1 cup sliced mushrooms
3/4 cup diced green peppers
1 cup sliced carrots
1 cup diced yellow squash
2 ½ cups butternut squash
2 bay leaves
1 tsp. fresh oregano
1 tsp. basil leaves
3 tsp. salt or to taste
1/4 cup sliced scallions
1 tbsp. washed and chopped cilantro (coriander leaves)
PREPARATION
In a dip pot place insert the water and all the ingredients, except for the scallions and cilantro.
At medium flame let it cook until boils. Lower the flame and let it simmer for 8 minutes.
Turn off the flame, let it rest for 8 minutes.
Serve the soup sprinkling the scallions and cilantro on top
