PORTIONS: 6 burgers (4 oz. each)
INGREDIENTS
1¼ lb. skinless, boneless and ground chicken
¼ lb. pork fat, ground
2 garlic cloves chopped
1 Tbsp. Spanish paprika
1 tsp. fresh chopped oregano
½ Tbsp. low sodium salt
¼ tsp. cayenne pepper or taste
½ tsp. ground cumin
1 Tbsp. cognac or whiskey
PREPARATION
In a bowl mix the ground chicken, ground pork fat, garlic, paprika,
oregano, salt, cayenne pepper, cumin and liquor. Let it set in refrigerator for
3 hour.
Make a small patty and cook it in a pan and taste it. Adjust seasoning
if necessary.
It should be well done with a minimum temperature of 165° F.
OPTIONAL TOPPING OF RED PEPPERS AND ONIONS
2 red peppers cut in Julienne
1 onion sliced cut in Julienne
1Tbsp oil.
Parmesan cheese
Heat up an skillet with the oil and saute onions and peppers until cook
but crispy.
Top the burgers with onions, peppers and Parmesan cheese.
