INGREDIENTS
½ cup Thai red rice
1 cup water
1 tbsp. vegetable oil
1 tsp. minced ginger
¼ cup diced red peppers.
¼ cup diced yellow peppers.
½ cup scallions. Cut it thinly slice in oblique angle
2 tbsp. diced prunes
METHOD
In a pot bring to a boil the
water and add the rice. Lower the flame and let it cook for 33 minutes,
approximately, until rice is soft and the liquid is absorbed.
Heat up the oil in a frying pan and sauté the ginger. Add red peppers
and yellow peppers and cook it slightly, then add scallions, prunes, rice and
mix it all together. Serve hot.
