INGREDIENTS: HOW TO MAKE THE
CRAB MEAT SALAD
1 avocado, pitted and cut in half
3 cups chopped Romaine lettuces
½ lb. crab meat
1/3 cup diced onions
¼ cup diced celery rib
1 tbsp. diced red peppers
1 tbsp. sliced scallions
¼ cup mayonnaise
Salt and pepper to taste
METHOD
In a bowl mix the crab meat with onions, celery, red pepper, scallions,
cilantro, mayonnaise, salt and pepper.
With a spoon, scoop out the avocado leaving a whole half. Stuff it with
the crabmeat.
Place the lettuces on the plate and put the avocado on top.
Arrange and decorate with:
Cooked broccoli
2 hardboiled eggs
Celery sticks
Grape tomatoes
Olives
BALSAMIC VINAIGRETTE DRESSING
½ cup olive oil
¼ cup balsamic vinegar
1 tsp. salt
¼ tsp. ground black pepper
Pour the ingredients in a bottle and shake well.
