BEEF PICADILLO
PORTIONS: 4
INGREDIENTS
1 tbsp. vegetable oil
1 lb. ground beef
1 small onion, diced
2 minced garlic cloves
1 diced celery rib
1 diced large carrot
½ red pepper, diced
½ yellow pepper, diced
1 sweet potato diced
½ cup sweet peas
1 tsp. cumin powder
¼ tsp. cayenne pepper
½ tbsp. Paprika
2 tsp. chopped parsley.
1 tsp. chopped fresh oregano
1 tsp. chopped fresh thyme leaves
¼ cup water
2 tsp salt
¼ tsp. ground black pepper
20 green and black olives
1 tbsp. capers
½ cup tomato sauce
METHOD
Heat the oil in a large frying pan. Sauté the onions and garlic
together. Add and brown the beef. Mix in cumin powder, cayenne pepper, paprika,
parsley, oregano, thyme leaves, salt, black pepper and cook for 2 minutes. Add
the vegetables and cook until are soft. Incorporate the tomato sauce, olives
and capers. Cook for 2 more minutes.
Serve it with rice.
