GRILLED MARINATED FLAT IRON STEAK AND BULGUR WHEAT WITH LEEKS AND SPINACH

INGREDIENTS
2 lb. Flat iron steak
2 tsp. red wine
vinegar
3 tbsp. Worcestershire’s
sauce
2 garlic cloves minced
½ tsp. coarse sea salt
¼ tsp. ground black pepper
½
tsp. ground cumin
1 tbsp. olive oil
METHOD
Mix all the spices together except the olive oil.
Cover the flank steak with the mixture and let it marinate at room
temperature for 1 hour. Turn it around every 15 minutes.
Heat up well a griddle. Brush the oil over the flank steak. Cook and
mark both sides of the flank steak. Cook the flank steak as you like it. Let it
rest for a few minutes before slicing it allowing the juices to settle.

INGREDIENTS
¾
cup bulgur wheat
1 tbsp. olive oil
1 chopped shallot
1 minced garlic clove
½ cup finely diced carrots
¾ cup sliced leeks
1½
cups water
¾ tsp. salt
2 cups spinach strips
METHOD
In a small pot, heat up the oil at moderate temperature and sauté
shallots, garlic, carrots and leeks together.
Pour in water, salt, bring it to a boil.
Add bulgur wheat, reduce the heat and cook until the liquid is
absorbed.
Mix in the spinach and let rest for a few minutes before serving.
