INGREDIENTS
Guacamole
Pico de gallo or pebre
2 chicken breasts
1 small onion cut in Julianne
1 red pepper cut in Julianne
QUESADILLAS
4 flour tortillas
2 cups cooked black beans
1 tbsp. vegetable oil
¼ cup diced onions
¼ green peppers diced
¼ red peppers diced
¼ yellow peppers diced
¼ tsp. cumin
½ tsp. chili powder
¼ cup shredded jack cheese
¼ cup shredded cheddar cheese
SALAD
2 cups romaine lettuces cut in pieces
2 sliced plum tomatoes
1 small cucumber cut in half moons
¼ cup of lemon juice
½ cup olive oil
1 tsp. salt
¼ tsp. ground black pepper
METHOD
Season the chicken breast with salt, pepper and a bit of oil on both sides.
Make guacamole and pico de gallo
Make dressing whisking lemon juice, olive oil, salt and pepper together.
Heat the oil in a frying pan and sauté the diced onions for a minute. Add the three color peppers, cumin, chili powder and sauté for 2 minutes. Add black beans and heat up. Season it with salt and pepper to taste.
Stir in the cheeses. Fill the tortillas half way with the beans and close them like ½ moons.
In a frying pan with a bit of oil sauté the Julianne onions and red peppers together. Set aside
Heat up the grill and cook the chicken breast on both sides. Cut chicken in slices.
Grill the quesadillas on both sides and cut them in triangle.
In a bowl mix the lettuces with the cucumber, tomatoes and dressing to taste.
Arrange salad and quesadillas in a platter. Place the sliced chicken on top of lettuces. On top of the chicken put the Julianne peppers. Arrange the slices of avocado around the platter.
Serve the platter with guacamole, pico de gallo and sour cream if you wish.
GUACAMOLE
INGREDIENTES
1 Palta (avocado) bien maduro.
½ tomate pequeño picado.
2 cucharadas de cebolla picada en cuadritos pequeños.
1 cucharada de jugo de limón.
½ cucharadita de ají picado.
1 cucharadita de cilantro picado.
Pelar y moler la palta con el jugo de limón sal y pimienta.
Agregar tomate, cebolla, ají , cilantro picado y mezclar.
PICO DE GALLO
INGREDIENTS
1 large ripe tomato
½ chopped white or red onion diced
1 jalapeño pepper chopped
2 scallions chopped
1 tbsp. chopped cilantro
1 lime juice
Just mix all the ingredients.
