ROASTED PORK SPARERIB STRIP WITH LO MEIN NOODLES

PORTIONS: 4 INGREDIENTS 3.5 lb. pork spareribs strip 5 tbsp. cup soy sauce 1tsp. cumin powder 1 tsp. minced ginger 1 tsp. minced garlic 1 tsp. onion powder METHOD Mix the seasoning ingredients and apply to the spareribs strips. Let to marinate for 2 hours. Place a griddle on top of a sheet pan. Pour 2 cups of water in the sheet pan. Place the pork on top of the griddle and roast it at 350° F for about 2 hours. Baste the pork every 15 minutes. Turn around the pork while is cooking. SAUCE ½ tbsp. peanut oil or vegetable oil 1 minced garlic clove ½ tsp. minced ginger 1 cup water ½ chicken bouillon without MSG ½ beef bouillon without MSG 1 tbsp. soy sauce 1tbsp. cornstarch mixed with 1 tbsp. water Heat a small pot with the oil and cook the ginger and garlic together. Add water, chicken bouillon, beef bouillon and soy sauce. Let it boil and thick it with the cornstarch mixed with water. LO MEIN NOODLES WITH VEGATABLES ½ lb. Lo Mein noodles. 2 tbsp. olive oil ½ tbsp. sesame oil 5 tsp. soy sauce 1 tsp. honey ¼ tsp. ground black pepper 1 minced garlic clove 1 tsp. minced ginger ½ red pepper cut in julienne ½ yellow pepper cut in julienne ½ orange pepper cut in julienne 1 cup sliced babybella mushrooms 1 cup snow peas. ¾ cup bean sprouts 1 carrot cut in julienne ¼ cup sliced scallions. METHOD Cook the noodles in boiling water and cool them in cold water. Strain the noodles. In a bowl, mix the noodles with 3 tablespoons soy sauce, honey and pepper. Heat the vegetable oil and sesame oil in a wok or frying pan. Sauté garlic and ginger together. Add the vegetables and cook them slightly. Add the other 2 tablespoons soy sauce to the vegetables and mix well.  Add noodles and mix. Heat up the noodles.
