CHICKEN MEATLOAF WITH MERLOT WINE SAUCE
INGREDIENTS
1 lb ground chicken
1 cup onions, diced very small
2 garlic cloves, minced
½ tsp oregano
1/4 tsp ground black pepper
1 tsp fennel seeds, grounded
1/4 tsp red pepper flakes
3/4 cups breadcrumbs
1/3 cup skin milk
2 tbsp egg beaters
1 1/4 tsp salt
SAUCE
2tbsp butter
1 tbsp olive oil
2 garlic cloves minced
1 cup sliced onions
6 oz mushrooms
1/3 Merlot wine
3 tbsp flour
3 ½ cups chicken broth unsalted
2 tbsp tomato sauce or puree
1/4 tsp fresh thyme leaves
1 tsp salt or to taste
1/4 tsp ground black pepper
PREPARATION
In a bowl, mix well the ground chicken, diced onions, minced garlic, oregano, ground black pepper, ground fennel seeds and red pepper flakes.
In a small bowl, mix bread crumbs, skin milk, egg beaters and salt.
Combine the chicken mix with the bread crumbs mix.
Make a loaf with the chicken an place in baking tray spread with cooking oil.
Preheat the oven at 375° F - 190° C .
Bake the meatloaf for about 45 minutes or until it has a minimum interior temperature of 165° F - 74° C.
SAUCE PREPARATION
In a small pot, heat up at medium temperature the batter and oil.
Cook the garlic and onions until star getting browned.
Add mushrooms and let them sweat. Cook until most of the liquid has evaporated.
Add melt wine and let it reduce. Let most of the wine to evaporate.
Add the flour and mix well. Reduce the flame and let the flour to cook stirring constantly or the flour will burn. Cook for about 2 minutes.
Add the chicken broth, tomato sauce, thyme leaves, salt, black pepper and stir continually until the sauce thicken. Let it simmer for 5 minutes.
