ROASTED KIELBASA SAUSAGE WITH POTATOES AND ONIONS

INGREDIENTS 1 lb. kielbasa sausage. Slightly cut the surface diagonally. 3 large sweet potatoes, peeled and scalloped. 3 large Idaho potatoes, peeled and scalloped. 2 tbsp. olive oil 1 tsp. salt 1/4 tsp. ground pepper 1 large onion cut in julienne. 1 large red pepper, seeds removed and cut in julienne. 1 large yellow pepper, seeds removed and cut in julienne. 2 tbsp. parsley washed and chopped. 2 tbsp. scallions washed and thinly sliced diagonally.  PREPARATION Preheat oven at 475° F - 246° C. In a cooking tray mix the sweet potatoes, Idaho potatoes, 1 tbsp olive oil, ½ tsp salt, and pepper.  Cook the potatoes for about 20 minutes. With an spatula turn around the potatoes.  In the same tray place the sausage and let it cook until the potatoes and sausage are roasted. About 15 more minutes. Heat up a skillet with 1 tbsp olive oil. Cook the onions for a minute. Add peppers, scallions and ½ tsp salt to the skillet and cook for 2 minutes. Peppers should be al dente.  To serve place the onions and peppers in center of the plates. Cut the sausage in 4 pieces and add a piece on top of the onions and peppers on each plate. Add the mixed potatoes around the sausage and peppers.
