SLOPPY JOES SANDWICHES


PORTIONS: 4
INGREDIENTS
8 oz. ground chicken
8 oz. ground pork
1 tbsp. vegetable oil
2 minced garlic cloves
1 mediums size onion chopped
½ celery rib, chopped
¼ green pepper diced
½ cup tomato puree
1 tsp. chopped fresh oregano
¼ tomato ketchup
¼ cup BBQ sauce
1 tbsp. Louisiana hot sauce
1 tsp. ground mustard seeds
2 tsp. salt
½ tsp. black pepper
METHOD
Heat the oil in a frying pan and add garlic, onion and celery. Cook for 2 minutes at moderate heat.
Add chicken, pork and brown it.
Add the rest of the ingredients and let it cook for about 10 minutes.
Serve on hamburgers buns.

SEEDED HAMBURGUER BUNS


YIELDS: 6 HAMBURGERS ROLLS

INGREDIENTS
3 cups unbleached flour
1 cup lukewarm water
2 tbsp. instant dry yeast
2 tbsp. granulated sugar
1 large egg, beaten
1 tsp. salt

TOPPING
1 tsp. flax seeds
2 tsp. sesame seed
1 beaten egg white

METHOD
In the mixer bowl add all the ingredients for the recipe, except for the topping.
At moderate speed mix for about 10 minutes.
Cover the bowl with plastic wrap and let the dough to ferment for about 2 hours. It should double in size.
Grease a baking sheet pan.
Divide dough in 6 pieces. Make 6 balls and place it in the baking sheet pan. Let the dough ferment again and it will double in size.
Preheat the oven at 375° and bake the dough for 10 minutes.
Pull out the sheet pan and brush the dough with egg whites and sprinkle the top with the seeds.
Place the baking pan back into the oven and cook for 14 more minutes until golden brown.
Remove the baking pan and let the bread cool off.


METHOD

PAN PARA HAMBURGUESAS CON SEMILLAS



RECETA PARA 6 PANES DE HAMBURGUESAS

INGREDIENTES
3 tazas de harina de trigo sin blanquear.
1 taza de agua templada.
2 cda. de levadura seca instantánea.
2 cda. azúcar granulada.
1 huevo batido.
1 cdta. Sal

COBERTURA
1 cdta. Semillas de linaza
2 cdta. Semillas de sésamo
1 clara de huevo batido.

MÉTODO
En el recipiente de batir de la máquina poner todos los ingredientes, excepto por la cobertura.
Batir a velocidad mediana por 10 minutos.
Cubrir con plástico el recipiente de la máquina y dejar a fermentar por 2 horas. Se duplicará en tamaño.
Engrasar una bandeja de hornear.
Dividir la masa en 6 trozos, darles una forma redonda  y ponerlos en la bandeja de hornear. Dejar que las masas fermenten y doblen de tamaño.
Precalentar el horno a 190° C y cocinar las masas por 10 minutos. Retirar la bandeja del horno y con una brocha de cocina pintar con la clara de huevo por encima del pan. Rociar las semillas por encima y que se peguen en la clara de huevo. Poner la bandeja de vuelta en el horno y cocinar por unos 14 minutos más, hasta que el pan quede dorado.
Retirar la bandeja del horno y dejar a enfriar.

PEPPER STEAK SANDWICH ON CIABATTA BREAD

PEPPER STEAK SANDWICH ON CIABATTA BREAD PORTIONS: 3 INGREDIENTS 1 large ciabatta bread Sirloin steak sliced  Mozzarella cheese sliced or your preferred cheese 1 tbsp. Vegetable oil 2 tbsp. mayonnaise 2 tbsp. mustard 1 small onion cut in Julianne ½ green pepper cut in Julianne ½ red pepper cut in Julianne 1 tsp. oregano leaves Salt and pepper to taste METHOD Heat up a frying pan with the vegetable oil and sauté peppers, onions and oregano together. Season it with salt and pepper to taste. Dry the beef with a paper towel and cut it in thin slices. Brush the beef with a bit of oil. Season it with salt and pepper or to your own taste. Heat up well a kitchen griddle and grill the beef on both sides. The ciabatta bread slice it open length wise. Mix mayonnaise and mustard together and spread it into the bread.  Spread peppers and onions on bread.  Put on top slices of grilled beef. Cover with slices of cheese the other half of the bread. Place both parts of the bread on a baking dish and bake it until cheese is melt. Close the sandwich. Slice it in sections and serve.

INGREDIENTS
1 large ciabatta bread

2 tbsp. mayonnaise
2 tbsp. mustard
1 small onion cut in Julianne
½ green pepper cut in Julianne
½ red pepper cut in Julianne
1 tsp. oregano leaves
Salt and pepper to taste

METHOD
Heat up a frying pan with the vegetable oil and sauté peppers, onions and oregano together. Season it with salt and pepper to taste.
Dry the beef with a paper towel and cut it in thin slices. Brush the beef with a bit of oil. Season it with salt and pepper or to your own taste.
Heat up well a kitchen griddle and grill the beef on both sides.
The ciabatta bread slice it open length wise.
Mix mayonnaise and mustard together and spread it into the bread.
Spread peppers and onions on bread.
Put on top slices of grilled beef.
Cover with slices of cheese the other half of the bread.
Place both parts of the bread on a baking dish and bake it until cheese is melt.
Close the sandwich. Slice it in sections and serve.
