SHRIMPS AND BROCCOLI WITH SWEET AND SOUR SAUCE

PORTIONS: 3 INGREDIENTS 12 oz shrimps, peeled and deveined 1 tbsp vegetable oil 3 garlic cloves, minced 1 tsp ginger root, peeled, minced ½ onion chopped 1 cup celery, cut thin diagonally 1 ½ cups pineapple chunks 1 cup red peppers diced SAUCE 2 cups pineapple juice 3 tbsp light soy sauce 1 tsp kecap Manis ( sweet soy sauce) 2 tbsp ketchup 1 tbsp Chinese cooking wine 1 tsp brown rice vinegar 1/4 tsp hot red pepper flakes 2 tbsp cornstarch 2 ½  tbsp cold water PREPARATION OF THE SAUCE At moderate heat in a small pot, combine the apple juice, soy sauce, sweet soy sauce, ketchup, cooking wine, brown rice vinegar and red pepper flakes. Bring the sauce to a boil. Mix the cornstarch with the water. When the sauce is boiling, thick it with the cornstarch mix. SHRIMP PREPARATION Heat up the oil in a saute pan or wok . Add garlic, ginger, onions and saute for about ½ a minute. Add shrimps, celery, red peppers. Shrimps should be cooked and vegetables al dente.   Add pineapple chunks, sauce and serve.

INGREDIENTS

2 cups pineapple juice

2 ½  tbsp cold water

PREPARATION OF THE SAUCE
