GRILLED SZECHUAN PORK CHOPS WITH SWEET WILD BLACK RICE

PORTIONS: 2 INGREDIENTS 2 pork chops 1 scallion finely chopped 1 tbsp. soy sauce 1 minced garlic clove  1 tsp. finely chopped ginger ½ tbsp. sesame chili oil  1 tbsp. lemon juice 1 tsp. chili paste ½ tsp. sugar METHOD Mix all the spices together and seasoning the pork chops. Marinate for 3 hours prior to cooking it. Heat a top stove griddle and cook the pork chops the way you like it.  If you like you may use the broiler. SWEET WILD BLACK PURPLE RICE WITH VEGETABLES TURNS PURPLE AFTER COOKING PORTIONS: 4 3/4 cup black rice 1¼ cup cold water 1 tbsp. vegetable oil ¼ cup chopped onions ½ of a celery rib, diced ½ of a carrot diced  ¼ of a green pepper diced METHOD  Wash the rice with cold water.  At moderate temperature heat the oil in a small pot and sauté the vegetables together for 3 minutes. Add the rice, water and cover. Bring it to a boil. Reduce the heat and cook the rice for about 45 minutes.


PORTIONS: 2

INGREDIENTS

3/4 cup black rice
1¼ cup cold water
1 tbsp. vegetable oil
¼ cup chopped onions
½ of a celery rib, diced
½ of a carrot diced
 ¼ of a green pepper diced

METHOD
Wash the rice with cold water.
